Moroccan Kefta Kebab

Instructions

  1. If using bamboo skewers, soak them in water.

  2. Combine 1 pound ground beef or lamb, 3 ounces optional fat, 1 finely chopped medium onion, 2 teaspoons paprika, 1 teaspoon ground cumin, 1 teaspoon salt, 1/4 teaspoon freshly ground black pepper, 1/8 teaspoon cayenne pepper, 1/4 cup chopped fresh parsley, 1/4 cup chopped fresh cilantro, 1 teaspoon optional ground cinnamon, and 1 tablespoon optional chopped fresh mint in a large mixing bowl.

  3. Cover the mixture and chill in the refrigerator for at least 1 hour.

  4. Preheat the grill or grill pan.

  5. Form the kefta into cylinders or sausage shapes, then skewer and mold the meat onto the skewers.

  6. Cook kebabs over hot coals for approximately 5 minutes per side, adjusting cooking time based on grill heat and kefta thickness.

  7. Serve immediately, or wrap in foil to keep warm.
