Moroccan Kefta Kebab

If using bamboo skewers, soak them in water.

Combine 1 pound ground beef or lamb, 3 ounces optional fat, 1 finely chopped medium onion, 2 teaspoons paprika, 1 teaspoon ground cumin, 1 teaspoon salt, 1/4 teaspoon freshly ground black pepper, 1/8 teaspoon cayenne pepper, 1/4 cup chopped fresh parsley, 1/4 cup chopped fresh cilantro, 1 teaspoon optional ground cinnamon, and 1 tablespoon optional chopped fresh mint in a large mixing bowl.

Cover the mixture and chill in the refrigerator for at least 1 hour.

Preheat the grill or grill pan.

Form the kefta into cylinders or sausage shapes, then skewer and mold the meat onto the skewers.

Cook kebabs over hot coals for approximately 5 minutes per side, adjusting cooking time based on grill heat and kefta thickness.

Serve immediately, or wrap in foil to keep warm.
