Instructions

  1. Preheat a griddle or large skillet over medium-low heat.

  2. In a large bowl, combine fine semolina, sugar, baking powder, and salt; then blend in butter until the mixture is sandy.

  3. Mix in 1/2 cup milk to form a moist dough, adding more if necessary to achieve the correct consistency.

  4. Shape the dough into balls, allow them to rest briefly, then roll in coarse semolina (if using) and flatten into approximately 1/4-inch thick discs.

  5. Cook the discs for 5 to 10 minutes per side on the preheated griddle until golden brown, flipping only once.

  6. Serve immediately with jam, cheese, or butter.
