Moroccan Coconut Snowball Cookies (Richbond Cookies)

Moroccan snowball cookies, also known as Richbond, are soft treats flavored with apricot jam, orange flower water, and a coconut coating.

Instructions

  1. Preheat oven to 360 F (180 C) and line baking sheets with parchment paper.

  2. In a large bowl, beat eggs, oil, sugar, and vanilla until smooth. Mix in flour, baking powder, and salt to form a soft, slightly sticky dough.

  3. If needed, add a small amount of additional flour if the dough is too sticky.

  4. Shape dough into cherry-sized balls and place on prepared baking sheets, spaced one inch apart.

  5. Bake for 10-12 minutes until lightly golden. Transfer to a rack and cool for 5 minutes.

  6. While cookies bake, pour coconut into a shallow dish.

  7. Blend apricot jam until smooth if it contains fruit pieces.

  8. Heat apricot jam and orange flower water in a saucepan over medium heat until hot and syrupy.

  9. Dip several cooled cookies into the hot jam.

  10. Take two jam-dipped cookies, press their bottoms together, then roll the sandwiched cookie in coconut.

  11. Place coated cookies back on parchment paper to finish cooling.

  12. Repeat with remaining cookies, reheating jam as necessary to maintain a thin consistency.
