Instructions
-
Preheat oven to 360 F (180 C) and line baking sheets with parchment paper.
-
In a large bowl, beat eggs, oil, sugar, and vanilla until smooth. Mix in flour, baking powder, and salt to form a soft, slightly sticky dough.
-
If needed, add a small amount of additional flour if the dough is too sticky.
-
Shape dough into cherry-sized balls and place on prepared baking sheets, spaced one inch apart.
-
Bake for 10-12 minutes until lightly golden. Transfer to a rack and cool for 5 minutes.
-
While cookies bake, pour coconut into a shallow dish.
-
Blend apricot jam until smooth if it contains fruit pieces.
-
Heat apricot jam and orange flower water in a saucepan over medium heat until hot and syrupy.
-
Dip several cooled cookies into the hot jam.
-
Take two jam-dipped cookies, press their bottoms together, then roll the sandwiched cookie in coconut.
-
Place coated cookies back on parchment paper to finish cooling.
-
Repeat with remaining cookies, reheating jam as necessary to maintain a thin consistency.
