Moroccan Chicken Tagine With Chickpeas and Raisins

Instructions

  1. In a heavy-bottomed pot, combine chicken, onions, garlic, oil, butter, and all spices. Cover and cook on medium heat, stirring occasionally, for 15-20 minutes.

  2. Add tomatoes, cilantro, and parsley; cover and continue cooking on medium heat, stirring occasionally, for another 20 minutes until a rich sauce forms. Adjust heat to prevent sticking.

  3. Stir in raisins, chickpeas, honey, and ground cinnamon (if using), then add enough water to cover the chickpeas.

  4. Cook for 10-15 more minutes, until the sauce thickens and chicken is tender.

  5. Transfer to a platter; optionally garnish with fresh cilantro. Serve.
