Instructions

Combine semolina, flour, salt, sugar, and baking powder.

In a blender, add lukewarm water and yeast, then slowly incorporate the dry ingredients.

Blend for one minute until the batter is smooth and thin.

Pour batter into a bowl, cover, and rest for 10 minutes until foamy.

Heat a small non-stick skillet over medium heat.

Stir the batter, then ladle it into the hot skillet, letting it spread into a circle.

Cook for about two minutes, or until the surface is spongy and dry with visible bubbles; do not flip.

Transfer the cooked pancake to a towel to cool in a single layer before stacking.
