Moroccan Baked Whole Sardines

A simple Moroccan recipe features sardines baked on a bed of rock salt, often served with cumin.

Instructions

  1. Preheat oven to 350 F (175 C).

  2. Wash and scale the sardines, then drain them.

  3. Optionally line a baking dish, then cover the bottom generously with rock salt and arrange the sardines on top.

  4. Drizzle each sardine with olive oil and season with pepper; optionally add more salt and thin lemon slices.

  5. Bake for 10 minutes until tender; for darker skin, bake in the upper oven.

  6. Transfer sardines to a platter, garnish with lemon, and serve with cumin on the side.
