Instructions

  1. Preheat the oven to 450 F. Grease 4 (6-ounce) ramekins and dust them with cocoa powder, tapping out any excess.

  2. Melt chocolate and butter together in a double boiler over simmering water until smooth.

  3. In a stand mixer, beat eggs, yolks, sugar, and salt on medium speed for about 6 minutes until the mixture is thickened, pale, and nearly tripled in volume.

  4. Fold the melted chocolate mixture and flour into the egg mixture until smooth and fully combined.

  5. Place the ramekins on a baking sheet and divide the batter evenly among them.

  6. Bake for 12 minutes, until the cakes are set at the edges but the center remains soft.

  7. Cool the cakes for 4 minutes, then invert them onto serving plates and let stand for 1 minute before unmolding. Serve warm, optionally with whipped cream or ice cream.
