Molasses Baked Beans With Salt Pork

Instructions

  1. Preheat oven to 300 F.

  2. Rinse beans, soak overnight, then drain.

  3. Combine drained beans and onion in a saucepan, cover with water, and simmer for 45 minutes until skins burst; drain, reserving liquid.

  4. Mix 1 cup reserved bean liquid with molasses, mustard, brown sugar, and salt.

  5. In a 2-quart baking dish, layer half the salt pork and all the beans. Pour the molasses mixture over, adding more reserved liquid to cover the beans. Top with remaining salt pork.

  6. Bake covered for 4 hours, adding reserved liquid if beans dry out. Uncover and bake for another hour until tender.
