Mojito Pitcher

A make-ahead pitcher mojito simplifies party preparation with light rum, homemade mint syrup, lime juice, and club soda.

Instructions

  1. Bring water to a boil in a small saucepan.

  2. Add sugar and stir until dissolved.

  3. Reduce heat to a simmer, add torn mint leaves, cover, and simmer for 5 minutes. Cool completely.

  4. Strain mint from the syrup and transfer to an airtight container; refrigerate.

  5. Juice 6 to 8 limes to yield about 1 1/2 cups of strained juice.

  6. Combine rum, 1 cup mint syrup, and 1 cup lime juice in a pitcher, adjusting to taste for a strong base, then chill.

  7. Before serving, add chilled club soda to the pitcher.

  8. Pour into ice-filled glasses and garnish with mint sprigs and lime slices.
