Moist Peach Cobbler Bread

Instructions

  1. Preheat oven to 350 F and prepare a 9x5x3-inch loaf pan by greasing and flouring it.

  2. Set aside 10 to 12 peach slices, then puree the rest to yield about 1 cup.

  3. Combine the pureed peaches with melted butter, eggs, and vanilla.

  4. In a separate bowl, mix flour, sugar, baking powder, soda, salt, and 1 teaspoon of cinnamon.

  5. Add the dry mixture to the wet mixture and blend until just combined.

  6. Pour batter into the prepared pan. Slice the reserved peaches lengthwise and arrange them on top, then sprinkle with cinnamon sugar.

  7. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool in the pan for 15 minutes before removing to a rack to cool completely.
