Instructions

  1. Preheat the oven to 375 F and thoroughly grease a 9-inch loaf pan.

  2. In a large bowl, combine flour, nuts, baking powder, baking soda, salt, and cinnamon.

  3. Mash peeled bananas in a separate bowl, then stir in oil until well blended.

  4. Beat eggs in another bowl, add sugar, and beat until dissolved.

  5. Stir vanilla into the egg mixture, then add to the banana mixture and combine.

  6. Add the liquid ingredients to the dry ingredients and mix gently until just combined, avoiding overmixing.

  7. Pour batter into the prepared loaf pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove the pan from the oven and cool for 10 minutes, then invert to remove the bread and cool completely on a wire rack.
