Mock Cheese Soufflé

Instructions

  1. Spray a 2 1/2 quart soufflé dish.

  2. Layer half the bread cubes, half the cheddar, and 2 tablespoons Parmesan in the dish. Repeat with the remaining cheddar and 2 tablespoons Parmesan, pressing to fit.

  3. Whisk all remaining ingredients, except the final 2 tablespoons Parmesan, in a bowl until foamy.

  4. Pour this mixture over the bread and cheese layers. Cover and refrigerate for at least 2 hours or overnight.

  5. Preheat oven to 350 F. Uncover the dish and sprinkle with the remaining 2 tablespoons Parmesan.

  6. Bake for 45 to 50 minutes, or until puffed, golden brown, and a knife inserted near the center comes out clean. Serve immediately.
