Mizu Yokan Recipe

Mizu yokan is a chilled Japanese red or white bean jelly dessert, easily prepared at home for summer enjoyment.

Instructions

  1. Soak kanten in water for one hour until soft, then squeeze out excess water and tear into small pieces.

  2. In a medium pan, combine kanten pieces or powder with 1 1/4 cups water, bring to a boil, then reduce heat and simmer, stirring until kanten fully dissolves.

  3. Stir in the sugar until dissolved.

  4. Add sweet red bean paste, stirring constantly, and simmer until the mixture thickens.

  5. Pour the mixture into a shallow rectangular container, cool to room temperature, then refrigerate until firm.

  6. Cut into blocks and serve chilled.
