Mizeria (Polish Cucumbers in Sour Cream)

Instructions

  1. Thinly slice 1 large cucumber, place in a colander, sprinkle with 1/2 teaspoon salt, and let stand for 30 minutes.

  2. While cucumbers rest, combine 1/2 cup sour cream, 1 teaspoon granulated sugar, 2 teaspoons white vinegar (if using), and 1 tablespoon finely chopped dill in a small bowl; refrigerate until needed.

  3. Pat the salted cucumbers dry, discarding any liquid.

  4. Combine the dried cucumbers and chilled dressing in a medium bowl, then toss thoroughly.

  5. Taste and adjust seasoning with additional salt and pepper if desired.

  6. Chill the salad for approximately 1 hour until very cold.

  7. Garnish with extra dill just before serving.
