Mixed Vegetable Curry

Instructions

  1. Thaw vegetables completely.

  2. While vegetables thaw, blend quartered onion, tomatoes, green chiles, ginger, and garlic into a smooth paste in a food processor.

  3. Heat cooking oil in a deep pan over medium heat; add the blended paste and all powdered spices, including garam masala.

  4. Sauté the mixture, stirring frequently, until oil separates from the masala.

  5. Add thawed vegetables, salt to taste, and 0.5 cup warm water; cook until vegetables are tender.

  6. Remove from heat and stir in yogurt until fully blended.

  7. Garnish with chopped fresh coriander and serve.
