Mixed Fruit Vanilla Cake

Instructions

  1. Preheat oven to 350F and line a 9x13-inch pan with nonstick foil.

  2. Steep dried fruit in hot water for 15 minutes, then drain thoroughly.

  3. Whisk together melted butter, sour cream, milk, eggs, and vanilla in a large bowl.

  4. In a separate bowl, whisk flour, sugar, baking powder, salt, and nutmeg.

  5. Combine the dry mixture with the wet ingredients, stirring until just blended. Fold in the drained dried fruit.

  6. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  7. Allow the cake to cool completely before frosting.

  8. For the frosting, process cubed butter, cream cheese, vanilla, chopped dried fruit, and confectioners' sugar until smooth.

  9. Evenly spread the frosting over the cooled cake and refrigerate for 1 hour to set.

  10. Serve the cake at room temperature.
