Preheat the oven to 275 F.

Combine oats, nuts, seeds, coconut, sweetener, oil, salt, vanilla, and cinnamon on a large, rimmed baking sheet; toss until fully coated, then spread into a single layer, forming clumps for clusters if preferred.

Bake for 45 minutes to 1 hour, stirring every 15 minutes to ensure even toasting, until the granola is dry and golden.

Immediately add dried fruit and toss while the granola is still hot, then allow it to cool completely.

Store the cooled granola in an airtight container at room temperature for up to one week.
