Instructions

  1. Preheat a steamer.

  2. Combine rice flour types and sugar in a bowl. Gradually add hot water, stirring until a rough dough forms.

  3. Knead the dough until smooth, then divide into 15 equal pieces and roll into balls.

  4. Steam the dumplings for 10 minutes on high heat.

  5. Once cooled slightly, slide 3 dumplings onto each bamboo skewer.

  6. For the glaze, combine water, sugar, and soy sauce in a saucepan and bring to a boil over medium heat.

  7. Stir in the starch slurry, bring to a boil again, then turn off the heat.

  8. Pan-fry or grill the skewered dumplings until they have light grill marks.

  9. Brush the prepared mitarashi sauce over the dumplings and serve immediately.
