Instructions
-
Soften vanilla ice cream for 20 minutes, then mix with 2 tablespoons bourbon and spread evenly into the pie crust. Freeze.
-
Combine chocolate, brown sugar, granulated sugar, heavy cream, and corn syrup in a microwave-safe bowl. Microwave for 3 minutes, whisking every 30-60 seconds, until thickened.
-
Whisk butter, vanilla, and the remaining 1 tablespoon bourbon into the warm fudge mixture.
-
Remove the frozen pie from the freezer. Top with half of the fudge sauce and half of the chopped pecans, then freeze for 1 hour.
-
Soften coffee ice cream for 20 minutes. Spread it over the firm first layer, mounding as needed.
-
Top the pie with more fudge sauce, reserving some for serving, and all remaining chopped pecans.
-
Decorate with whipped cream, cover loosely, and freeze for a minimum of four hours, or preferably overnight. Serve with the reserved warm fudge sauce.
