Instructions

  1. Reduce milk to half its original volume in a heavy-bottomed pan over medium heat, stirring frequently, then cool to lukewarm.

  2. In a separate pan, melt and caramelize sugar over low heat; remove from fire, then thoroughly mix with the reduced milk.

  3. Gently stir the yogurt into the milk and sugar mixture.

  4. Pour into a container, preferably an earthenware pot, and place in a warm dark spot until set.

  5. Chill the firm Mishti Doi for several hours before serving.
