Instructions

  1. Bloom powdered gelatin by sprinkling it over cold water in a bowl and stirring quickly; let sit for 5 minutes.

  2. Meanwhile, whisk condensed milk, warm water, and sugar in a small pot and bring to a simmer over medium-high heat.

  3. Remove from heat and whisk in the bloomed gelatin until fully dissolved.

  4. Let the mixture sit for 2 minutes, then whisk until smooth; optionally, whisk in vanilla extract.

  5. Place white chocolate in a bowl, then pour the hot liquid mixture through a fine mesh sieve over the chocolate.

  6. Fully submerge an immersion blender and blend the glaze without raising it, adding food coloring gradually until the desired shade is reached.

  7. Transfer the glaze to a pouring vessel and stir every 5 minutes until it cools to 90 to 94 F.

  8. Prepare a glazing station by lining a sheet tray with parchment paper and placing an upside-down container as a cake platform.

  9. Once the glaze reaches 94 F, place your frozen cake on the platform and pour the glaze over it, starting from the center and moving outwards in a circular motion; gently tap the tray to remove excess glaze.

  10. Let the glaze set for 1 to 2 minutes, then trim any excess glaze with a paring knife and transfer the cake to a serving platter.
