Instructions
-
Bloom powdered gelatin by sprinkling it over cold water in a bowl and stirring quickly; let sit for 5 minutes.
-
Meanwhile, whisk condensed milk, warm water, and sugar in a small pot and bring to a simmer over medium-high heat.
-
Remove from heat and whisk in the bloomed gelatin until fully dissolved.
-
Let the mixture sit for 2 minutes, then whisk until smooth; optionally, whisk in vanilla extract.
-
Place white chocolate in a bowl, then pour the hot liquid mixture through a fine mesh sieve over the chocolate.
-
Fully submerge an immersion blender and blend the glaze without raising it, adding food coloring gradually until the desired shade is reached.
-
Transfer the glaze to a pouring vessel and stir every 5 minutes until it cools to 90 to 94 F.
-
Prepare a glazing station by lining a sheet tray with parchment paper and placing an upside-down container as a cake platform.
-
Once the glaze reaches 94 F, place your frozen cake on the platform and pour the glaze over it, starting from the center and moving outwards in a circular motion; gently tap the tray to remove excess glaze.
-
Let the glaze set for 1 to 2 minutes, then trim any excess glaze with a paring knife and transfer the cake to a serving platter.
