Minted Pea Purée

Instructions

  1. Bring water to a boil in a medium pot.

  2. Add peas, fresh mint, and a pinch of salt; boil, then reduce heat and simmer for 5 minutes until tender.

  3. Drain the pea mixture.

  4. Purée the drained peas and mint until smooth using a blender or masher, then season with salt and pepper.

  5. For a finer purée, push the mixture through a fine sieve.

  6. Stir in butter and optional chopped mint until melted.

  7. Serve warm.
