Instructions

  1. In a small saucepan, bring water and sugar to a boil over medium-high heat, whisking until sugar dissolves; then add mint leaves.

  2. Reduce heat to a simmer and cook for about 10 minutes without stirring, until the syrup slightly thickens.

  3. Pour the syrup into a metal bowl and let cool for about 10 minutes.

  4. Discard the mint leaves. Use the syrup immediately or cool it completely, then store it in a covered jar in the refrigerator for up to one month.
