Mint Ice Cream

Instructions

  1. Start simmering water for a double boiler. Warm milk in the top of the double boiler until bubbles begin to form.

  2. Separately, whisk eggs, sugar, and light corn syrup in a bowl.

  3. Slowly add the egg mixture to the warm milk, stirring constantly. Cook over simmering water for 5 minutes, or until the mixture thickens to a custard consistency.

  4. Remove the custard from heat. Stir in heavy cream, mint extract, and green food color. Cool the mixture to room temperature.

  5. Pour the custard into an airtight container and chill in the refrigerator for at least 8 hours.

  6. Churn the chilled custard according to your ice cream maker's instructions.

  7. Transfer the churned ice cream to a freezer-safe container. Freeze for 2 to 4 hours until set.

  8. Serve and garnish with fresh mint if desired.
