Instructions

  1. Preheat the oven to 250 F. Chill a mixing bowl and beaters for 15 minutes, then line a baking sheet with parchment paper.

  2. Beat egg whites and cream of tartar until soft peaks form; gradually add sugar, one tablespoon at a time, until the meringue is shiny with stiff peaks.

  3. Gently fold in mint extract, miniature chocolate chips, and optional food coloring.

  4. Drop scant teaspoonfuls onto the prepared baking sheet, spacing cookies about 1 inch apart.

  5. Bake for approximately 1 hour until the cookies are stiff and dry, then turn off the oven and allow them to cool inside for an additional 2 hours to fully dry.
