Instructions

  1. Preheat the oven to 375 F.

  2. Spray 8 muffin cups with nonstick cooking spray.

  3. Brown sausage in a large skillet over medium heat, breaking it into small chunks; drain thoroughly on paper towels.

  4. Whisk eggs and milk in a medium bowl, then mix in salt, pepper, parsley, and Tabasco.

  5. Stir three-quarters of the drained sausage and 1/2 cup shredded cheese into the egg mixture.

  6. Fill prepared muffin cups two-thirds full, then sprinkle remaining sausage and cheese over tops.

  7. Bake for 18 to 22 minutes until puffed and set; remove from pan, then loosen sides and lift onto a plate.
