Mini Puff Pastry Apple Tarts

Instructions

Preheat the oven to 400 F (200 C).

Line a large rimmed baking sheet with foil and parchment paper.

Combine granulated sugar, brown sugar, and cinnamon in a small bowl; set aside.

Cut the puff pastry sheet into four squares, arrange them on the baking sheet, prick with a fork, and chill while preparing apples.

Peel, core, and thinly slice apples, then arrange them diagonally over each pastry square and sprinkle with the sugar mixture.

Scatter small pieces of butter over the apples.

Bake for 25 to 30 minutes until the pastry is golden and apples are tender.

While tarts bake, combine apricot preserves, lemon juice, and honey in a saucepan and bring to a boil.

Immediately transfer hot tarts to a lined surface, strain the preserves mixture if lumpy, then brush generously over the tarts to glaze.

Serve warm, ideally with vanilla ice cream.
