Instructions
-
Preheat the waffle iron and the oven to 200 F.
-
Combine waffle dry ingredients in one bowl; in another, mix eggs, melted butter, buttermilk, and vanilla extract. Gently combine wet into dry ingredients without overmixing.
-
Grease the waffle iron, add batter per manufacturer's instructions, and cook until golden. Cut waffles into bite-sized pieces and keep warm in the oven while repeating with remaining batter.
-
Heat cooking oil in a deep pan to 375 F and line a baking sheet with paper towels.
-
Slice chicken breast into bite-sized pieces. Set up three bowls: one with flour, one with buttermilk, and one with panko breadcrumbs. Dredge each chicken piece sequentially in flour, buttermilk, then panko.
-
Fry chicken in small batches for 6 to 8 minutes, then transfer to the lined baking sheet.
-
Assemble chicken onto waffles with toothpicks. Garnish with shaved Parmesan and a drizzle of hot honey, then serve.
