Instructions

  1. Preheat the waffle iron and the oven to 200 F.

  2. Combine waffle dry ingredients in one bowl; in another, mix eggs, melted butter, buttermilk, and vanilla extract. Gently combine wet into dry ingredients without overmixing.

  3. Grease the waffle iron, add batter per manufacturer's instructions, and cook until golden. Cut waffles into bite-sized pieces and keep warm in the oven while repeating with remaining batter.

  4. Heat cooking oil in a deep pan to 375 F and line a baking sheet with paper towels.

  5. Slice chicken breast into bite-sized pieces. Set up three bowls: one with flour, one with buttermilk, and one with panko breadcrumbs. Dredge each chicken piece sequentially in flour, buttermilk, then panko.

  6. Fry chicken in small batches for 6 to 8 minutes, then transfer to the lined baking sheet.

  7. Assemble chicken onto waffles with toothpicks. Garnish with shaved Parmesan and a drizzle of hot honey, then serve.
