Start boiling salted water for blanching greens.

In a large stockpot, heat olive oil over medium heat, add garlic until fragrant (about 1 minute), then stir in crushed red pepper for 30 seconds.

Add broth, onion, carrot, celery, and sausage pieces; cover, reduce heat to low, and simmer for 20-30 minutes, including cheese rinds if desired.

Blanch chopped greens in the boiling salted water for 1-2 minutes, then drain well.

Remove and discard the onion, carrot, celery, and any cheese rinds from the broth.

Stir the blanched greens into the broth and simmer for an additional 20-30 minutes until the greens are tender.
