Instructions

  1. Start boiling salted water for blanching greens.

  2. In a large stockpot, heat olive oil over medium heat, add garlic until fragrant (about 1 minute), then stir in crushed red pepper for 30 seconds.

  3. Add broth, onion, carrot, celery, and sausage pieces; cover, reduce heat to low, and simmer for 20-30 minutes, including cheese rinds if desired.

  4. Blanch chopped greens in the boiling salted water for 1-2 minutes, then drain well.

  5. Remove and discard the onion, carrot, celery, and any cheese rinds from the broth.

  6. Stir the blanched greens into the broth and simmer for an additional 20-30 minutes until the greens are tender.

  7. Serve hot, topped with grated cheese and crusty bread.
