Instructions

  1. Preheat the oven to 350 F with a rack in the center, and line a large rimmed baking sheet with aluminum foil.

  2. Arrange 1 pound of bacon slices in a single layer on the prepared sheet, then bake for 10 minutes and remove from the oven.

  3. In a large bowl, whisk together 1/2 cup brown sugar, 1/4 cup maple syrup, 1/4 cup gochujang, 1/2 teaspoon ground ginger, and 1/2 teaspoon black pepper until smooth.

  4. Spoon and spread this mixture evenly over the bacon, then return it to the oven and bake for 10 more minutes.

  5. In a small bowl, combine 1/4 cup brown sugar, 1/2 teaspoon red pepper flakes, and 1 tablespoon orange zest, working the zest into the sugar with your fingers.

  6. Flip the bacon, then spoon the sugar and zest mixture over the top.

  7. Continue baking for 20 to 25 minutes, until the bacon is caramelized and crispy.

  8. Let the bacon cool on the baking sheet for approximately 1 minute, then transfer it to parchment paper and allow it to cool until fully set, 5 to 10 minutes. Drizzle any remaining sauce from the baking sheet over the bacon if desired.
