Instructions
-
Preheat the oven to 350 F with a rack in the center, and line a large rimmed baking sheet with aluminum foil.
-
Arrange 1 pound of bacon slices in a single layer on the prepared sheet, then bake for 10 minutes and remove from the oven.
-
In a large bowl, whisk together 1/2 cup brown sugar, 1/4 cup maple syrup, 1/4 cup gochujang, 1/2 teaspoon ground ginger, and 1/2 teaspoon black pepper until smooth.
-
Spoon and spread this mixture evenly over the bacon, then return it to the oven and bake for 10 more minutes.
-
In a small bowl, combine 1/4 cup brown sugar, 1/2 teaspoon red pepper flakes, and 1 tablespoon orange zest, working the zest into the sugar with your fingers.
-
Flip the bacon, then spoon the sugar and zest mixture over the top.
-
Continue baking for 20 to 25 minutes, until the bacon is caramelized and crispy.
-
Let the bacon cool on the baking sheet for approximately 1 minute, then transfer it to parchment paper and allow it to cool until fully set, 5 to 10 minutes. Drizzle any remaining sauce from the baking sheet over the bacon if desired.
