Instructions

  1. In a 1-pint or larger jar, stir the milk kefir grains into the milk.

  2. Cover the jar with a fine-weave cloth and a rubber band, then ferment in a warm, dark spot around 70F for 24-48 hours.

  3. After fermentation, strain the kefir through a fine-mesh strainer into a glass bowl, ensuring all liquid is released.

  4. Transfer the strained kefir milk to a sealed jar and refrigerate for up to 10 days; rinse the fermentation jar and reuse the kefir grains for a new batch.
