Milk-Braised Pork Chops
These milk-braised pork chops, serving two, are surprisingly simple to prepare and offer a delightful array of rich, complex flavors.

Preheat the oven to 250 F. Generously season pork chops with salt and pepper.

Heat 1 tablespoon of oil in a nonstick skillet over medium-high heat, then brown the chops on both sides.

Arrange the chops in an 8x8 baking dish, adding enough milk to reach halfway up the meat, along with whole garlic cloves and rubbed sage.

Tightly cover the baking dish with foil and bake in the oven for 45 minutes.

Remove, turn the chops over, re-cover, and return to the oven for another 45 minutes.

While the chops bake, thoroughly mix butter and flour in a small bowl to form a beurre manié.

Place cooked chops on a plate to keep warm. Pour the pan juices into a blender and puree until smooth.

Pour the puree into a skillet and simmer over medium heat. Gradually add the beurre manié, stirring constantly until the sauce thickens.

Taste, adjust seasonings as needed, and serve the sauce over the chops.
