Migas Recipe

A classic breakfast dish, migas features fried tortilla pieces and scrambled eggs, topped with Oaxaca cheese and optionally served with pico de gallo or salsa.

Instructions

  1. Preheat oven to 350 F with a rack in the center; whisk eggs and salt in a bowl and set aside.

  2. Heat vegetable oil in an oven-proof skillet over medium heat, then fry tortillas for about 2 minutes until crisp.

  3. Add onions and bell peppers, cooking for about 5 minutes until softened.

  4. Stir in the whisked eggs and cook until just set.

  5. Evenly top with Oaxaca cheese, then bake for about 8 minutes until melted.

  6. Remove from oven and top with avocado, cotija cheese, and salsa if desired.
