Middle Eastern Pita Bread

Instructions

  1. Preheat the oven to 500 F with the rack at the bottom and heat a baking sheet.

  2. Dissolve yeast in 1/2 cup warm water, then stir in sugar and let sit for 10 to 15 minutes until frothy.

  3. Combine flour and salt in a large bowl, then add the yeast mixture and 1 cup of warm water, stirring until an elastic dough forms.

  4. Knead the dough on a floured surface for 10 to 15 minutes until it is smooth and no longer sticky.

  5. Coat a large bowl with vegetable oil, place the dough inside, turn to coat completely, and let it rise in a warm place for about 3 hours until doubled in size.

  6. Once doubled, roll the dough into a rope and pinch off 10 to 12 small pieces.

  7. Form these pieces into balls, place them on a floured surface, and cover for 10 minutes.

  8. Roll each dough ball into a 5 to 6 inch wide, 1/4-inch thick circle.

  9. Bake each circle on the preheated baking sheet for 4 minutes until it puffs up, then flip and bake for an additional 2 minutes.

  10. Remove baked pitas to a wire rack, gently push down on each while warm, optionally sprinkle with minced parsley, and store in bags once completely cool.
