Microwave Meatloaf

A simple microwave meatloaf is prepared with ground beef, oats, and aromatic spices, then finished with a tangy sauce.

Instructions

  1. Microwave oil, onion, and garlic in a small bowl for 3-4 minutes until softened.

  2. In a large bowl, combine oats, half the tomato sauce, thyme, marjoram, garlic salt, pepper, and egg; mix with ground meat, then form into an 8x4 inch loaf.

  3. Place the loaf into a 9x5 inch glass pan, ensuring it doesn't touch the sides. Cover with waxed paper and microwave on high for 5 minutes, then siphon off accumulated juices.

  4. Mix brown sugar, Worcestershire, and mustard with the remaining tomato sauce, then spoon evenly over the meatloaf.

  5. Return the covered pan to the microwave, rotate, and cook at 50% power for 15-20 minutes, or until the internal temperature reaches 160 F.

  6. Cover with foil and let stand for 5 minutes before serving.
