Microwave Mashed Potatoes: Quick and Creamy Recipe

Instructions

  1. Place rinsed, peeled potato chunks in a microwave-safe bowl and cover with vented plastic wrap.

  2. Microwave on high for 9-12 minutes until the potatoes are tender.

  3. Carefully remove the bowl; transfer potatoes to a larger bowl if necessary for mashing.

  4. Warm 3/4 cup milk with 4 tablespoons butter in the microwave for 30-50 seconds until melted.

  5. Optionally, rice the potatoes before mashing.

  6. Add the warmed milk mixture to the hot potatoes and mash, avoiding overmixing with an electric mixer.

  7. Adjust consistency with additional milk and butter, then season with salt and pepper to taste.

  8. Serve warm.
