Meyer Lemon Curd
A homemade lemon curd is prepared using Meyer lemons for a vibrant, citrusy dessert or topping.

Instructions

Start a saucepan with simmering water for a double boiler.

Melt butter in the top of a double boiler, then stir in Meyer lemon zest, juice, and sugar.

Add egg yolks and continuously whisk the mixture over simmering water until thickened and a thermometer registers 170 F.

Remove from heat, pour into glass jars, and store in the refrigerator.
