Instructions

  1. Preheat the oven to 350°F and grease and flour a 9 by 13-inch baking pan.

  2. Cream softened butter and powdered sugar, then mix in 2 cups of flour until blended.

  3. Press the flour mixture evenly into the prepared pan and bake for 20 minutes.

  4. While baking, beat eggs until light, then gradually add granulated sugar until thick.

  5. Stir in Meyer lemon juice, zest, the remaining 1/3 cup of flour, and baking powder until thoroughly blended.

  6. Pour the lemon mixture over the warm crust and bake for 15 to 20 minutes, or until set and pale golden.

  7. Cool the bars, then dust with powdered sugar and cut into 24 squares for serving.
