Mexican-Style Rotisserie Chicken

Instructions

  1. Rinse and pat the chicken dry.

  2. Place chicken in a shallow dish, pouring lime juice over and inside the cavity.

  3. Create a pocket under the breast skin.

  4. Baste lime juice into this pocket, reserving some for later.

  5. Rub fresh cilantro under the skin.

  6. Cover and refrigerate for 1 to 2 hours.

  7. Remove chicken from the fridge and baste with the reserved lime juice.

  8. Lightly rub the chicken with olive oil, then fully coat it with taco seasoning.

  9. Stuff fresh lime halves and cilantro into the chicken cavity.

  10. Preheat the grill to high heat.

  11. Secure the chicken on the rotisserie rod, trussing its legs and wings.

  12. Cook for 1 1/4 to 1 1/2 hours, or until the internal temperature reaches 165-175 F.
