Mexican Fajita Kebabs

Instructions

  1. Soak wooden skewers for 30-60 minutes, or use metal skewers. Preheat a grill to medium heat (350F-375F).

  2. Combine oil, lime juice, cilantro, vinegar, oregano, cumin, garlic, and chile pepper (if using) in a zip-top bag or bowl.

  3. Add bell peppers, onion, and steak to the marinade; coat thoroughly, seal, and refrigerate for at least 8 hours or overnight.

  4. Thread beef and vegetables onto double skewers, alternating ingredients. Discard remaining marinade.

  5. Grill kebabs, turning often, for 10-15 minutes until beef reaches medium-rare (130F-140F). Garnish with cilantro and serve.
