Instructions

  1. Preheat the oven to 400 F.

  2. Grease and flour a 9x9-inch baking pan or use a cast-iron skillet.

  3. Sift flour, cornmeal, baking powder, and salt together.

  4. Combine milk, eggs, butter (or shortening), and optional sugar.

  5. Mix wet ingredients into dry until just moistened, then fold in corn, diced peppers, and cheese without overmixing.

  6. Pour batter into the prepared pan and bake immediately.

  7. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean and edges pull from the pan.
