Instructions

  1. Preheat oven to 200 F (93 C) and line a baking sheet with parchment paper.

  2. Beat egg whites until frothy, then add vanilla, cream of tartar, and salt; continue beating until soft peaks form.

  3. Combine sugar, water, lime zest, and lemon zest in a saucepan; boil over medium heat, swirling occasionally, until the mixture reaches 238 F (114 C).

  4. While mixing on medium speed, slowly pour the strained hot sugar syrup into the egg whites; continue beating for about 10 minutes until the mixture cools and forms stiff peaks.

  5. Pipe meringue onto the prepared baking sheet in bite-sized swirls. Bake for 5 hours, then turn off the oven and allow meringues to cool slowly inside for at least 3 hours or overnight until crisp.

  6. Dust cooled meringues with powdered sugar or cocoa powder before serving or storing.
