Wash eggplants, remove stems, and slice lengthwise into 1/2-inch pieces.

Heat 1/4 inch of oil in a frying pan over medium heat, then lightly fry eggplant slices until soft and browned.

Layer the fried eggplant in a baking dish.

Combine tomatoes, basil, garlic, salt, and pepper in a bowl.
