Instructions

  1. Preheat the oven to 350 F (176 C).

  2. Wash eggplants, remove stems, and slice lengthwise into 1/2-inch pieces.

  3. Heat 1/4 inch of oil in a frying pan over medium heat, then lightly fry eggplant slices until soft and browned.

  4. Layer the fried eggplant in a baking dish.

  5. Combine tomatoes, basil, garlic, salt, and pepper in a bowl.

  6. Spoon the tomato mixture over the eggplant.

  7. Top with feta cheese and bake for 45 minutes.
