Meatloaf With Sausage

Preheat the oven to 350 F.

Melt 2 tablespoons unsalted butter in a large skillet. Sauté 1 cup finely chopped onion, 1/2 cup finely chopped carrot, 1/3 cup finely chopped celery, and 1 tablespoon minced garlic for 6-8 minutes until tender.

Stir in 1 tablespoon Italian seasoning, 2 teaspoons salt, and 1/2 teaspoon freshly ground black pepper. Set aside to cool for 10 minutes.

In a large bowl, combine 1 1/2 pounds ground beef chuck, 1/2 pound Italian sausage, 1 1/4 cups fresh breadcrumbs, the cooled vegetables, 3 eggs, 1/2 cup ketchup, 1/3 cup chopped fresh flat-leaf parsley, 2 tablespoons Dijon mustard, and 1 tablespoon Worcestershire sauce. Mix until evenly distributed without overworking.

Press the mixture evenly into a 9x5-inch loaf pan.

For the glaze, combine the remaining 1/2 cup ketchup with 2 tablespoons brown sugar in a small bowl.

Spread 2/3 of the glaze over the meatloaf, covering to the edges, then bake for 30 minutes.

Remove the meatloaf, spread the remaining glaze, and bake for another 25-35 minutes until the internal temperature reaches 160 F.

Let the meatloaf rest for 15 minutes before slicing and serving.
