Instructions

  1. Preheat the oven to 375 F.

  2. In a large skillet, melt butter over medium heat, then sauté onion and garlic for 4 to 5 minutes until translucent.

  3. Add carrots and sauté for 4 minutes; then add crumbled meatloaf and cook for 4 to 5 minutes until heated through.

  4. Stir in flour and sauté for 3 minutes.

  5. Pour in broth, ketchup, mustard, Worcestershire sauce, marjoram, and season with salt and pepper; stir and simmer for 10 minutes.

  6. Prepare mashed potatoes according to package directions or use leftover.

  7. Stir peas and sour cream into the meat mixture.

  8. Transfer the mixture to a 2 1/2-quart casserole dish, then top evenly with mashed potatoes, creating peaks with a fork.

  9. Sprinkle with Parmesan cheese.

  10. Bake for 25 to 35 minutes until bubbly and golden brown, then let cool for 10 minutes before serving.
