Instructions

  1. Start boiling salted water in a medium pot to fully submerge room temperature eggs.

  2. Once at a rapid boil, reduce heat to low, then carefully add eggs one at a time.

  3. Return heat to high and boil for 6 minutes 30 seconds, gently flipping eggs for the first 3 minutes to center yolks.

  4. While eggs boil, combine soy sauce, water, aged soy sauce, balsamic vinegar, sugar, scallions, chiles, and optional sesame seeds and garlic in a 32-ounce container; stir until sugar dissolves.

  5. Drain hot water from eggs and cool them under cold running tap water.

  6. Peel eggs and place them in the container with the sauce, ensuring full submersion.

  7. Cover and refrigerate for at least 6 hours to marinate.

  8. Serve 1-2 sliced eggs over warm rice, drizzled with sauce; store refrigerated in sauce for up to one week.
