May Day Munkki (Cardamom Doughnuts) Recipe

Instructions

  1. In a small pan, combine and heat quark and water until lukewarm (about 100F).

  2. In a large bowl, mix the quark mixture with yeast until dissolved. Incorporate salt, sugar, cardamom, egg, and 2 cups of flour.

  3. Add an additional 1 1/3 cups of flour and softened butter, then mix well. Allow the dough to rest for 20 minutes.

  4. Sprinkle 2/3 cup of flour onto a work surface, then turn out the dough. Divide into 16 balls and stretch each to form a hole in the center, creating doughnuts.

  5. Place formed doughnuts on a cookie sheet and let them rest for 30 minutes.

  6. Meanwhile, fill a large shallow pan with at least 2 inches of canola oil and heat to 350F over medium-high heat.

  7. Fry doughnuts for 2 minutes on each side until golden brown.

  8. Remove fried doughnuts with a slotted spoon, drain on paper towels, then toss with sugar and serve immediately.
