Matcha Green Tea Mousse

Instructions

Dissolve gelatin in 4 tablespoons of water and set aside.

Combine egg yolks and sugar in a bowl.

Heat milk in a pan, then dissolve the reserved gelatin into the hot milk.

Slowly incorporate the milk-gelatin mixture into the egg mixture.

Dissolve green tea powder in 3 tablespoons of warm water, then add it to the egg-milk mixture; stir well while cooling the bowl in ice water.

Fold whipped heavy cream into the mixture.

Pour the mixture into serving cups and chill for up to 2 hours.
