Matcha Green Tea Mousse

Instructions

  1. Dissolve gelatin in 4 tablespoons of water and set aside.

  2. Combine egg yolks and sugar in a bowl.

  3. Heat milk in a pan, then dissolve the reserved gelatin into the hot milk.

  4. Slowly incorporate the milk-gelatin mixture into the egg mixture.

  5. Dissolve green tea powder in 3 tablespoons of warm water, then add it to the egg-milk mixture; stir well while cooling the bowl in ice water.

  6. Fold whipped heavy cream into the mixture.

  7. Pour the mixture into serving cups and chill for up to 2 hours.
