Instructions

  1. Preheat the oven to 350 F and place a rack in the center.

  2. In a large bowl, combine coconut milk, water, vanilla extract, and sugar; mix until sugar dissolves.

  3. Add baking powder, then gradually incorporate mochiko, 1/2 cup at a time, mixing thoroughly after each addition until batter thickens.

  4. Stir in 2 to 2 1/2 tablespoons matcha powder until well combined.

  5. Spray a 9x13-inch baking dish with cooking spray, then pour in the batter.

  6. Bake for approximately 1 hour, or until the top is golden and edges are browned and chewy.

  7. Allow mochi to cool to room temperature before cutting into large squares with a non-stick knife.

  8. Optionally dust with confectioners' sugar before serving.
