Instructions

  1. Preheat the oven to 350 F with racks in the upper and lower third.

  2. Beat eggs and sugar in a large bowl until light and foamy (about 5 minutes).

  3. Slowly whisk cooled lard and vanilla into the egg-sugar mixture.

  4. Combine flour and baking powder, then gradually add to the egg mixture to form a firm dough.

  5. Divide the dough into thirds. Roll out one portion to 1/8-inch thick on parchment paper and cut with a 2 to 2 1/2-inch round cutter.

  6. Cut a small hole in the center of half of the cut cookies, removing the center and surrounding scraps.

  7. Bake cookies for 7 to 8 minutes until edges are golden, then remove and cool completely.

  8. Repeat the rolling, cutting, and baking process with remaining dough and re-rolled scraps.

  9. Dust the holed cookies with confectioners' sugar. Spread jam on the solid cookies, then press together with the holed cookies to form sandwiches.
